lisa-pic-150x150Ok, I know this is not a cooking website but everyone loves to eat (unless you are strange) and some of us love to cook. I love to cook, love to eat and really love to eat sweets! As a result I’ve decided to share with ya’ll a great old fashioned sugar cookie recipe. My mother-in-law says this is like the tea cakes her grandmother used to make.

So, get your apron on and start baking!

Soft Sugar Cookies

1/2 c. shortening

1/2 c. white sugar

1/2 c. brown sugar

1 egg (room temp.)

3/4 c. buttermilk

1 tsp. vanilla

2 c. all-purpose flour

1/2 tsp. baking soda

1/2 tsp. salt

Preheat oven to 400. Cream together shortening, sugar and brown sugar. Mix in egg, then buttermilk and vanilla. Combine the dry ingredients, stir into creamed mixture. Chill the dough for 1 hour.

Drop mixture by rounded teaspoonfuls 2″ apart on lightly greased baking sheet. Bake for 7-9 minutes until set. (Cookies will be pale and lightly browned around edges) Makes approx. 4 dozen.

If you want you can sprinkle tops of cookies with cinnamon sugar before you bake them. Really good that way!

I especially love these with butter cream icing because the cookies themselves are not extremely sweet. Just mix together softened butter, powdered sugar, a little vanilla and enough milk to make it spreadable. (I like to color my icing just to jazz it up a little.) Let the cookies cool and top them with your icing and enjoy. Heaven!!!
