MISSISSIPPI MAMA’S HOME COOKIN’ – Oven Glazed Ribs
This is my sister’s recipe. (Thanks, Sis!) She uses baby back ribs, but I’m sure this recipe would be just as good using spare ribs. If you haven’t planned your menu for your Superbowl parties yet these ribs would be perfect!! These would also be great with some of my past recipes. (Do a search on this site and find the Fried Wings, Ultimate Dip, and even the Potato Salad recipes and you have a football party!!) Remember, if you will be serving a lot of people you may want to double or triple this recipe!
Oven Glazed Ribs
2 pounds bone-in ribs
salt & pepper
3/4 cup OJ
2 tablespoons lemon juice
1/2 cup packed brown sugar
1 1/2 teaspoons garlic powder
1 teaspoon grated lemon peel
3/4 teaspoon ground ginger
1 bay leaf
Place ribs on a rack in a foil-lined roasting pan; sprinkle with about 3/4 teaspoon salt and 1/4 teaspoon pepper. Bake uncovered at 400 degrees for 30 minutes. Turn ribs, reduce temperature to 350 degrees and bake 30 minutes longer.
Meanwhile, combine OJ, lemon juice, brown sugar, garlic powder, lemon peel, ginger, bay leaf, 1 teaspoon salt, and 1/4 teaspoon pepper in a saucepan. Bring to a boil. Reduce heat; simmer uncovered for 15 minutes. Discard bay leaf.
Brush ribs with sauce. Bake, uncovered for another 45 – 60 minutes or until tender, turning and basting about every 15 – 20 minutes.
This makes enough for about 4 people to have 4 ribs each. BUT, they’re usually so good 2 people can finish them off if they’re hungry enough.

well–we will see. i figure–IF the saints play like they did in the beginning of the year–maybe. in the beginning–and some in the end–even playoffs–they got a lot of turnovers and got the the quarterback often. if that happens–they have a chance. peyton is great–but if the line gets to him and he can’t make those amazing throws–it will be tough! should be a great game either way.
