MISSISSIPPI MAMA’S HOME COOKING – Smash Cake

Submitted by admin on Thursday, 25 February 2010One Comment

My husband’s aunt calls this Smash Cake but other people have called it different things. Either way it is great!! It’s really rich, so you’ll need to cut this into small pieces.

Smash Cake

1 box yellow cake mix
1 stick butter, melted
1 egg
chopped pecans

Topping

8 oz cream cheese, softened
1 box powdered sugar
2 eggs

Mix together the cake mix, melted butter and the egg and pour into a pan. Now press one cup of chopped pecans into the mixture. Mix the cream cheese, powdered sugar, and two eggs together and pour over the crust. Bake at 350 degrees for 30-35 minutes. It will be puffy and maybe slightly brown. Sometimes it won’t even look done but do not let it cook for over 35 minutes. Let cool for 5 – 10 minutes and then cut. Enjoy!
