MISSISSIPPI MAMA’S HOME COOKING – Taco Dip

Football season is upon us!  I would like to remind everyone of a few recipes that I have already posted that would be great for either the football party at the house, or even for just you and your spouse on game day.  Whether it be on Saturday for college or Sunday for the NFL , if you do not like football, it is almost a sure bet someone you know does.

Fried chicken wings, Steak Kabobs, Ribs, Mini Sliders, and even Fajitas are great for game day.  You would want to pick something that requires no utensils to make it easy.  You could make side dishes but you will need utensils for those.  Pasta Salad, Potato Salad, and Baked beans are great sides.  Dips are also important.  I have posted a wonderful “Ultimate Dip” and a Roasted Salsa. This week will be a version of the Seven Layer Dip.  My recipe is more than 7 layers so I would call this a Taco Dip.  It includes all things good on dip or tacos.

For this dip, I will list a ton of things, you choose what you like and use it.  Try to experiment.  I do not like guacamole–but I do in this.  My daughters do not like sour cream–but they do in this.  There is something about these ingredients, while using only a small amount and mixed with other things, taste great!  Try it and see.  I will list everything and give an order of layering, you choose what you want and how much of it!

Taco Dip

1 can refried beans

1 pound–maybe 1/2 pound–ground beef

salt, pepper, garlic powder, onion powder, package of taco seasoning

sour cream

guacamole

diced tomatoes

salsa

chopped or shredded lettuce

shredded cheese–your choice of flavor

diced green onions

diced or sliced hot peppers–your choice of kind

sliced black olives

If you add them up, that’s 11 ingredients.  Start by heating the refried beans, either on the stove or in the microwave.  Add about 2 tablespoons of water and stir often until warm.  While this is heating, cook the ground beef and season while cooking with salt, pepper, garlic powder, and onion powder.  Once done, drain excess fat and add the taco seasoning pack–follow package directions. Turn off after heated all the way through.

On a platter, start layering your dip. Begin with a layer (as thick or as thin as you want) of refried beans.  Next will be the meat.  Now, I will go in order of adding–you add what and how much you want.  Guacamole and sour cream will go next, this may be a little tough to spread–just do your best.  Add the lettuce, if adding the above–either one or both–will help the lettuce stick.  If you are not adding the guacamole or sour cream, put the salsa then the lettuce–otherwise add salsa on top of the lettuce.  Add shredded cheese, then diced tomatoes.  The next items will be the peppers, green onions, and black olives.  Serve this with any kind of chips you like.  I like some sort of “scoop” chips. This makes it easier to pick up and no worries about double dipping.  Enjoy!
